We offer you a recipe for pears with parmesan and a recipe for French toast with pears.
Parmesan pears
Half halved, lengthwise, six pre-washed pears.
< Scoop out three-quarters with a small spoon and reserve the pulp in a container. Sprinkle with lemon juice to prevent it from turning black.
< In a large salad bowl, mix two egg yolks and 50g cottage cheese or ricotta. ➤ Beat two egg whites.
< Add egg yolk/cheese mixture, lemon pear pulp, 40g grated Parmesan, salt, pepper and a pinch of nutmeg.
< Gently fold in the egg whites.
< Arrange the hollowed pears in a buttered dish. Fill each with cheese mixture.
< Bake in the oven at 180° for about 30 minutes.
This dish can be served with thin slices of dried ham.
French toast with pears
< Peel and cut three very ripe pears in half.
➤ Remove the core and seeds then cut the pear into thin strips.
< Pour half a liter of milk and 50 grams of caster sugar in a bowl.
➤ Add two whole eggs. Mix everything with an electric mixer.
Dip six nice slices of brioche or stale brioche bread into this mixture.
< Melt 30g of butter in a frying pan. Place three slices dipped in milk/sugar/egg mixture and brown both sides of the slices. Book them on absorbent paper and repeat the operation with the remaining three parts.
< In the same pan, brown the pear slices in 50g of melted butter. Add 20 grams of caster sugar to a sachet of vanilla sugar. Cook until the pears caramelize.
Arrange pear slices on brioche or toasted bread slices.
