To make this Italian recipe, nothing could be simpler: spaghetti, guanciale, tomatoes, pecorino and peppers. This traditional spaghetti all’amatriciana recipe takes its name from Amatrice, a small town in Italy.

The recipe for spaghetti all’amatriciana is controversial. The debate rages over the choice of pork cut: pancetta, speck or guanciale? Traditionally, guanciale is the original ingredient. For the pasta, the original Amatriciana recipe calls for spaghetti. The recipe was modified by Roman cuisine by introducing bucatini. Note that while not the pasta of choice for this Italian recipe, amatriciana sauce goes very well with rigatoni!

Materials

  • 400 grams of spaghetti
  • 350 g guanciale (speck or pancetta)
  • Tomato coulis 500 ml
  • 2 onions
  • pepper
  • olive oil
  • 2 bay leaves
  • Pecorino

Cook the spaghetti in a pot of boiling salted water. Make sure they are al dente by referring to the cooking time indicated on the packet.

Drain the pasta. Keep half a cup of cooking water. Toss spaghetti lightly with olive oil.

Cut the guanciale (or pancetta) into small pieces. Finely chop the onion.

Brown the guanciale (or pancetta) and sweat the onion in a hot skillet with a drizzle of olive oil.

When the bacon is cooked and browned, pour in the tomato sauce. Add a pinch of pepper. Be careful about dosage, pepper is strong. It is recommended to taste it as you go, only if necessary, add a little pepper. Discard the bay leaves.

Let everything boil. Add ½ cup pasta cooking water.

After boiling for ten minutes, pour the spaghetti into the pan. Mix well.
