Vegan pasta with avocado cream

Preparation time: 5 minutes
Cooking time: 10 minutes

Ingredients:
– 350 grams of pasta (rigatoni)
– 1 large avocado
– 1 pinch of fresh coriander leaves
– 1 handful of basil
– 1 half lemon
– Salt and pepper
– 2 cases olive oil
Preparation:
1. Cook the pasta in plenty of salted water for the time indicated on the package so that it is al dente.
2. Meanwhile, prepare the avocado cream: Remove the pit and place the flesh in a salad bowl. Mash well with a fork then add the finely chopped coriander and basil and the juice of half a lemon. Salt pepper.
3. Toss pasta then brush with olive oil. Add the avocado cream and serve immediately.
Vegan Mushroom Pasta

Ingredients:
– 400 grams of pasta (fusilli)
– 400 grams of fresh button mushrooms
– Olive oil
– 1 clove of garlic
– Vegetable broth 20 cl
– vegetable liquid cream 20 cl
– Salt and pepper
Preparation:
1. Cook the pasta in plenty of salted water for the time indicated on the package.
2. Wash and thinly slice the mushrooms and brown them in a pan with olive oil and minced garlic.
3. When they start grilling well, pour in the vegetable broth and vegetable liquid cream. Season with salt and pepper then bring to a boil. Then lower the heat to thicken the sauce.
4. Drain the fusilli and submerge in the sauce. Serve hot.

Ingredients:
– 1 butternut squash
– Olive oil
– 1 clove of garlic
– 400 grams of pasta (penne)
– 1 handful of pine nuts
– Provencal herbs
– Salt and pepper
Preparation:
1. Peel the butternut and cut into small cubes. In an oiled frying pan, brown butternut squash cubes with minced garlic. Add little water and cook until the butternut cubes are soft.
2. Cook the pasta in plenty of salted water for the time indicated on the package.
3. Blend the butternut squash until a smooth and homogeneous mixture is obtained.
4. Toast the pine nuts in a pan, being careful not to burn them.
4. Drain the pan then pour the sauce on top. Season with salt and pepper then sprinkle with Provencal herbs and toasted pine nuts before serving.
Vegan Bolognese Pasta

Ingredients:
– 2 onions
– 2 cloves of garlic
– 1 carrot
– Olive oil
– 150 g of textured soy protein
– 40 cl of water
– 1 bunch fresh basil
– Tomato puree 80 cl
– Salt and pepper
– 400 grams of pasta (spaghetti)
Preparation:
1. Chop the onion and garlic cloves. Peel the carrots and cut them into small cubes. Fry everything in a large pan with olive oil for a few minutes.
2. Add the textured soy protein, water and finely chopped basil. When the water has completely evaporated, pour in the tomato puree, season with salt and pepper then simmer for 30 minutes.
3. Cook the spaghetti in plenty of salted water for the time indicated on the package.
4. Drain the pasta then dip in the Bolognese and serve.
Vegan Pasta Gratin with Spinach

Preparation time: 10 minutes
Cooking time: 40 minutes

Ingredients:
– Spinach 300 grams
– 1 clove of garlic
– 3 cases of olive oil
– 3 cases of flour
– 500 ml vegetable milk (eg soya)
– Salt and pepper
– Nutmeg
– 750 grams of pasta (farfale)
– Vegan grated cheese
Preparation:
1. Fry spinach with minced garlic in an oiled frying pan so that they release all their water.
2. Meanwhile, make the vegan béchamel: Heat 3 cases of olive oil and add the flour to make a roux. Continue mixing until the béchamel thickens and slowly pour in the milk. Add salt, pepper and a pinch of nutmeg.
3. Next, cook the pasta in plenty of salted water for the time indicated on the package.
4. Mix the drained spinach with the béchamel and pour into a gratin dish. Add drained farfalle and mix well. Sprinkle with vegan grated cheese and bake at 180°C for 25 minutes until nicely browned. Serve hot!
