Here’s a recipe for spaghetti with cheese and chili, by Cyril Lignac (Everyone in the kitchenM6):

Preparation time: 20 minutes
Cooking time: 20 minutes

Ingredients for 4 people

  • 320 grams of spaghetti
  • 3 tbsp. Bell pepper
  • Pecorino 70 grams
  • Parmesan 70 grams
  • Coarse cooking salt

Immerse spaghetti in boiling salted water for 6 minutes.
Grind the pepper. Pour the pepper into the pan and add 3 tablespoons of the pasta cooking water.
When the pasta is cooked, set the cooking water aside, drain with tongs and add to the pan with the chilli broth. Continue to cook on low heat for 5 minutes, stirring gently.
Grate the pecorino and parmesan.
Add the cheese to the pasta while it continues to cook in the wok.
Add cooking water if needed and continue mixing to get a runny cooking and a creamy effect.
Using pasta tongs and a ladle to make a nest, place the pasta in a deep plate, add the creamy sauce, a little pepper and sprinkle with grated pecorino.
